Coconut Flour Chicken Tenders
Breaded chicken tenders made with coconut flour.

- 3 boneless skinless chicken breasts cut into thin strips
- 2 egg whites lightly beaten
- 1/4 cup Coconut Flour
- 3/4 cup grated parmesan cheese
- 1/4 teaspoon salt
- ¼ teaspoon ground black pepper
- Coconut Oil
Add beat egg whites to a bowl. In a pie dish or plate mix together coconut flour, parmesan cheese, salt and pepper.
Dip the chicken strips first into the egg white and then roll in the coconut flour mixture. Repeat until all of the chicken s trips are coated.
Melt the coconut oil in a deep skillet over medium heat to around 375 degrees Fry the chicken strips in batches until golden brown and fully cooked (the internal temperature has reached 165 degrees F.), 4-6 minutes. Turn the chicken strips halfway through cooking. Drain on a plate lined with paper towels.
