Crockpot Cilantro Lime Chicken
Mexican cilantro lime chicken in the slow cooker.

- ½ cup chicken broth
- ¼ cup olive oil
- ¼ cup lime juice
- 4 garlic cloves peeled and smashed
- 1 jalapeno pepper seeded and chopped
- 1 teaspoon kosher salt
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 2 pounds boneless skinless chicken breasts
- ½ cup chopped cilantro
Add all of the ingredients except for the cilantro into a slow cooker. Cover and cook on low for 4-6 hours or until the chicken shreds easily. Shred the chicken using two forks. Stir in chopped cilantro.
Serve on tacos, burritos, nachos, etc.
