Healthy and delicious zucchini noodles with chicken.
4boneless skinless chicken breastscut into bit-sized pieces
4medium zucchinirinsed and spiralized
Juice of ½ lemon
1teaspoonfresh thyme leaves
Slicesof lemonfor garnish
1teaspoonground black pepper
In a large bowl combine the marinade ingredients. Add the chicken pieces and mix until evenly coated. Marinate in the refrigerator for at least 30 minutes.
Heat 2 tablespoons of butter in a large skillet over medium-low heat. Add chicken pieces and fry, turning until all sides are golden brown and fully cooked (the internal temperature has reached 165 degrees F.). You might have to cook them in batches to avoid overcrowding the pan. Remove from the pan.
In the same pan add 2 tablespoons of butter, lemon juice, hot sauce, and chicken broth. Bring to a simmer. Add fresh parsley and garlic, add zucchini noodles and toss for 2-3 minutes. Add chicken pieces back to the pan and cook for another minute. Garnish with fresh parsley and thyme for serving.
