Ground Beef Quesadillas

Mexican quesadillas made with ground beef

Ingredients
  

  • 8 large flour tortillas
  • Cooking spray
  • 1 lb ground beef
  • 2 cups shredded Mexican cheese blend
  • ¼ cup water

Taco Seasoning-

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

Instructions
 

  • In a small bowl combine all of the ingredients for the taco seasoning. Heat a large skillet over medium-high heat. Add the ground beef and cook while breaking up into chunks with a spatula or spoon until browned. Drain any excess grease. Add the taco seasoning and water and simmer for 10 minutes or until the meat mixture is thick and has little liquid remaining.
  • Spray a large non-stick skillet with cooking spray. Heat it to medium-low heat. Place a tortilla into the pan. Top the tortillas with a layer of shredded cheese. On one half of the top of the tortilla place some of the cooked taco meat. Cook until the bottom is browned and the cheese has melted. With a spatula fold the half of the tortilla without the meat mixture over the half with the meat mixture and press down. Remove from the pan. Repeat with the remaining tortillas.
