Cajun Chicken and Sausage

A delicious cajun chicken and sausage recipe prepared in a skillet.

Ingredients
  

  • 1 lb peeled and deveined large raw shrimp
  • 13 oz chicken or pork sausage cut into ¼ inch slices
  • 2 medium zucchinis thinly sliced with skin
  • 2 medium yellow squash thinly sliced with skin
  • 1 medium chopped red pepper
  • 2 tbsp olive oil
  • 2-3 tbsp Cajun seasoning see below for recipe

Cajun Seasoning (makes about 3/4 cup)

  • 3 tbsp paprika
  • 1 tbsp salt
  • 2 tbsp garlic powder
  • 1 tbsp black pepper
  • ½ tbsp white pepper
  • 1 tbsp onion powder
  • 1 tbsp dried oregano
  • ½ tbsp cayenne pepper add to taste
  • ½ tbsp dried thyme

Instructions
 

  • Add sliced sausage, zucchini, yellow squash, and red pepper to a large mixing bowl. Add 1 tbsp of olive oil and mix well. Prepare Cajun seasoning by mixing all ingredients listed together. Add to the bowl and mix until ingredients are evenly coated, but save ¼ tbsp.
  • Put raw shrimp into a bowl with about 1 tsp of olive oil and mix, then add the remaining ¼ tsp of Cajun seasoning to coat the shrimp.
  • Add large mixing bowl ingredients to a large skillet or wok. Cook on medium-high heat for about 5 minutes and add the raw shrimp. Cook until the shrimp turns white and vegetables become soft (approximately 3 more minutes).
  • Serve on pasta, rice, cauliflower rice, potatoes, or eat alone.
