Preheat the oven to 350 degrees Line a baking sheet with parchment paper.
In a medium bowl, whisk together the coconut flour, coconut oil, maple syrup, vanilla extract, salt and eggs until a uniform batter is created. The batter is going to start off runny but it will thicken as the coconut flour absorbs the moisture.
Stir in chocolate chips into the batter. Use a heaping tablespoon to drop the cookie dough onto the lined baking sheet, and use your hands to flatten the dough. The cookies will not spread on their own, so you will want to shape them how you would like them to look. Repeat until the cookie dough is gone.
Place into the oven and bake at 350 degrees for 12-14 minutes or until the edges are golden brown. Allow to cool on the pan for 10 minutes, transfer to a wire rack to cool completely.
