Roasted Garlic Parmesan Chickpeas

Chickpeas roasted and flavored with garlic and parmesan cheese.

Ingredients
  

  • 2 cans of chickpeas garbanzo beans- drained, rinsed, & dried
  • 3 tbsp olive oil
  • 1 tsp salt divided
  • ¼ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried parsley
  • ½ tsp black pepper
  • ¼ tsp lemon zest

Instructions
 

  • Preheat oven to 400 degrees Line a large baking sheet with parchment paper.
  • Add drained, rinsed, and dried chickpeas to a large mixing bowl and coat evenly with olive oil and mix in ½ a teaspoon of salt. Place in single layer on baking sheet and bake for 45-50 minutes, stirring them on the sheet every 10-15 minutes.
  • Allow chickpeas to cool for about 5 minutes, then pour back into a mixing bowl. Mix together grated parmesan cheese, garlic powder, onion powder, dried parsley, black pepper, lemon zest, and remaining ½ tsp of salt in a bowl. Pour mixture over the chickpeas and stir until coated.
