Roasted Garlic Parmesan Chickpeas

Roasted Garlic Parmesan Chickpeas are a healthy snack full of fiber and protein that are full of flavor and are relatively simple to make. Roasting them in the oven gives them a great crunch while maintaining a chewiness on the inside and the garlic parmesan seasoning is delicious with the flavor of the chickpeas. Chickpeas are also known as garbanzo beans and are fairly inexpensive, so this recipe is really quite budget-friendly. They make a great snack and yield about 30-32 ounces once prepared. Ingredients

  • 2 cans of chickpeas garbanzo beans- drained, rinsed, & dried
  • 3 tbsp olive oil
  • 1 tsp salt divided
  • ¼ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried parsley
  • ½ tsp black pepper
  • ¼ tsp lemon zest

Instructions

  • Preheat oven to 400 degrees Line a large baking sheet with parchment paper.
  • Add drained, rinsed, and dried chickpeas to a large mixing bowl and coat evenly with olive oil and mix in ½ a teaspoon of salt. Place in single layer on baking sheet and bake for 45-50 minutes, stirring them on the sheet every 10-15 minutes.
  • Allow chickpeas to cool for about 5 minutes, then pour back into a mixing bowl. Mix together grated parmesan cheese, garlic powder, onion powder, dried parsley, black pepper, lemon zest, and remaining ½ tsp of salt in a bowl. Pour mixture over the chickpeas and stir until coated.
