There’s nothing quite like homemade Classic Peanut Butter Cookies. I find that they are an easier recipe to make and we usually have the ingredients on-hand in the house, so they make for a great, quick recipe to throw together when the craving arises. These cookies are soft and chewy and have the perfect texture. They do not need to bake for a long time, so it is wise to keep an eye on them as they are baking, so they do not overcook or burn on the bottom. Ingredients
  

  • ¾ cup creamy peanut butter
  • ½ cup softened butter
  • cup all-purpose flour
  • ¼ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 tbsp granulated sugar separated, for top of cookies

Instructions
 

  • Preheat oven to 350 degrees Lightly grease baking sheet or place parchment paper on top.
  • Cream together peanut butter, softened butter, granulated sugar and brown sugar with a hand or stand mixer. Add egg and vanilla extract until fully incorporated.
  • In a separate mixing bowl, add flour, baking soda, and salt and mix well. Slowly add mixture to the creamed ingredients until well combined.
  • Roll the cookie dough into approximately 1-inch balls and place on cookie sheet, leaving about 2 inches between cookie. Using a fork, press horizontally, then vertically, making a crisscrossed pattern. Be careful not to flatten the dough ball too much. Sprinkle tops with separated sugar.
  • Bake for about 10-12 minutes, until cookies just start to brown. Let cool before serving.
