There’s nothing quite like homemade Classic Peanut Butter Cookies. I find that they are an easier recipe to make and we usually have the ingredients on-hand in the house, so they make for a great, quick recipe to throw together when the craving arises. These cookies are soft and chewy and have the perfect texture. They do not need to bake for a long time, so it is wise to keep an eye on them as they are baking, so they do not overcook or burn on the bottom. Classic Peanut Butter Cookies

Ingredients

  • ¾ cup creamy peanut butter
  • ½ cup softened butter
  • cup all-purpose flour
  • ¼ cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 tbsp granulated sugar separated, for top of cookies

Instructions

  • Preheat oven to 350 degrees Lightly grease baking sheet or place parchment paper on top.
  • Cream together peanut butter, softened butter, granulated sugar and brown sugar with a hand or stand mixer. Add egg and vanilla extract until fully incorporated.
  • In a separate mixing bowl, add flour, baking soda, and salt and mix well. Slowly add mixture to the creamed ingredients until well combined.
  • Roll the cookie dough into approximately 1-inch balls and place on cookie sheet, leaving about 2 inches between cookie. Using a fork, press horizontally, then vertically, making a crisscrossed pattern. Be careful not to flatten the dough ball too much. Sprinkle tops with separated sugar.
  • Bake for about 10-12 minutes, until cookies just start to brown. Let cool before serving.
