Certainly if you have ever been to the Chinese buffet or any Chinese restaurant in the United States, you are familiar with general tso’s chicken. Here I have a recipe for homemade General Tso Chicken for you. Generals chicken is both sweet and spicy and is a favorite among Chinese-American dishes.  The chicken in this recipe is battered and then deep-fried and mixed with a sweet and spicy sauce. You can use either boneless chicken breasts or thighs for this dish. I would recommend using boneless thighs because they will be more flavorful and less dry.  The sauce gets a lot of heat from dried red chili peppers. Most of the sauce flavor comes from soy sauce and white vinegar. The chicken is battered in a slurry that is just a simple combination of egg, soy sauce, and cornstarch. You can serve this dish with white rice and add some broccoli into the mix if you want. It is delicious.

Ingredients
  

Slurry-

  • 1 egg beaten
  • ¼ cup soy sauce
  • ¾ cup cornstarch

Sauce-

  • ¼ cup cornstarch
  • 1/8 cup water
  • 1 ½ teaspoons minced garlic
  • ¼ cup sugar
  • ¼ cup soy sauce
  • 1/8 cup white wine
  • 2 cups chicken broth

Other-

  • 2 pounds boneless chicken thighs cut into chunks
  • Green onions
  • 5 dried chilies

Instructions
 

  • In a large bowl combine egg, ¼ cup soy sauce, and ¾ cup cornstarch. Mix well. It will be a thick batter. Add the chicken pieces to coat.
  • In a medium bowl combine al of the sauce ingredients. Mix well and set aside.
  • Heat oil in a deep-fryer to 375 degrees Add about 8 pieces of chicken to the hot oil, allowing any excess batter to drip off and fry until golden brown and fully cooked (the internal temperature has reached 165 degrees F). Drain on a plate lined with paper towels.
  • While the chicken is frying. Add a little bit of a oil to a wok or skillet. Add the green onions and chili peppers and stir-fry for 30 seconds. Stir in the sauce mixture and cook until thicken and bubbly. Toss the chicken with the prepared sauce and serve.
