The combination of fresh banana and blueberries make for a delicious tasting waffle. These waffles are easy to make and great to serve for either breakfast or as a side-dish with dinner. You will want to use ripe bananas for this recipe as they will work the best. Some of the toppings that you can put on these waffles are fresh blueberries, banana, whipped cream, butter and maple syrup. A lot of the flavor in these waffles comes from the banana and vanilla extract.
Banana Blueberry Waffles
Waffles made with fresh banana and blueberries
Ingredients
- 2 cups all purpose flour
- ¼ cup granulated sugar
- 2 teaspoons baking powder
- 2 eggs
- 2 cups milk
- 1 smashed very ripe banana
- 1 teaspoon vanilla extract
- 1 cup fresh blue berries
Instructions
- In a bowl mixing bowl sift together flour, sugar and baking powder. Add beaten egg and half of the butter milk. Mix together using a mixer and then add the remaining milk, a little at a time, mixing as you add it. Beat in banana and vanilla extract until well combined. Fold in the blueberries.
- Preheat and grease a waffle iron. Cook the waffles according to directions on your waffle iron. Repeat until all of the batter is used up.
- Top with your favorite toppings for serving.
