The combination of beef, rice, and beans in a burrito is absolutely amazing. The beef is seasoned taco meat and the rice gets a lot of flavor from fresh cilantro. For the beans you can use either black beans or pinto beans. Other ingredient include cheddar cheese and sour cream. You can really use whatever type of cheese you want, Monterey jack or a Mexican cheese blend would be good options as well. This recipe will make 6 large burritos that everyone is sure to love.
Beef, Rice, and Bean Burritos
Delicious burritos with beans, rice and beef.
Ingredients
Rice-
- 1 ½ cups chicken broth
- ¾ cup white rice
- ½ teaspoon salt
- ¼ cup minced fresh cilantro
Beef and bean mixture-
- 1/4 cup chicken broth
- 1 can pinto bean rinsed
- 1 tablespoon vegetable oil
- 3 tablespoons tomato paste
- 3 garlic cloves minced
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chipotle chili powder
- 10 ounces lean ground beef
- 1 tablespoon lime juice
- ¾ teaspoon salt
- 6 10-inch flour tortillas
- 2 ½ cups shredded cheddar cheese
- 6 tablespoons sour cream
Instructions
- In a small sauce pan bring broth, rice, and salt to a boil over medium-high heat. Reduce heat to low, cover and simmer until all the liquid has absorbed, about 20 minutes. Remove from heat and let sit covered for 10 minutes. Stir in cilantro.
- Heat oil in a large skillet over medium heat. Add ground beef, and cook breaking up into chunks with a spatula. Stir in tomato paste, garlic, cumin, oregano, and chili powder. Stir in the beans, cook until the meat is no longer pink and fully cooked, about 10-12 minutes. Cook until most of the liquid has evaporated. Stir in lime juice and salt.
- Warm the tortillas according to package directions. Lay out the tortillas on a flat surface. Divide the rice beef and bean mixture, and cheddar cheese among the tortillas. Dollop each with a tablespoon of sour cream. Fold the sides over the filling, fold the bottom of the tortilla over sides and filling and roll tightly.
