Preparing a recipe for zucchini noodles with chicken is perfect for a healthy and delicious dinner. Zucchini noodles are a much healthier and low-carb alternative to pasta. The chicken in this recipe is flavored with various seasoning and the noodles get a lot of flavor from a lemon butter sauce. The chicken has a nice kick to it from the hot sauce in the marinade. For the zucchini noodles you can spiral them yourself with a spiralizer or a lot of times you can buy prepacked zucchini noodles from the store but it is probably going to be more expensive that way.

Ingredients
  

  • 4 boneless skinless chicken breasts cut into bit-sized pieces
  • 4 medium zucchini rinsed and spiralized
  • 4 tablespoons butter divided
  • 2 teaspoon minced garlic
  • 1 tablespoon hot sauce
  • ¼ cup chicken broth
  • Juice of ½ lemon
  • 1 tablespoon minced parsley
  • 1 teaspoon fresh thyme leaves
  • Slices of lemon for garnish

Marinade-

  • 2 tablespoon olive oil
  • 1 tablespoon hot sauce
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon Italian seasoning

Instructions
 

  • In a large bowl combine the marinade ingredients. Add the chicken pieces and mix until evenly coated. Marinate in the refrigerator for at least 30 minutes.
  • Heat 2 tablespoons of butter in a large skillet over medium-low heat. Add chicken pieces and fry, turning until all sides are golden brown and fully cooked (the internal temperature has reached 165 degrees F.). You might have to cook them in batches to avoid overcrowding the pan. Remove from the pan.
  • In the same pan add 2 tablespoons of butter, lemon juice, hot sauce, and chicken broth. Bring to a simmer. Add fresh parsley and garlic, add zucchini noodles and toss for 2-3 minutes. Add chicken pieces back to the pan and cook for another minute. Garnish with fresh parsley and thyme for serving.
